My Mum’s Corn Beef Hash
· 500 g mash potatoes (more if you like) made with butter and salt to taste
· One small onion or spring onions peeled and chopped finely and then added to mash potato (optional)
· One 340 g can of lean corned beef
· One large can of baked beans
· Large handful of cheddar cheese (optional)
· Ground salt and black pepper to season
Preheat the oven to 200 degrees C or gas mark 6
If you can leave the corn beef in the fridge for an hour or so, this will make it easy to cube
Cube the corn beef into 1cm cubes and place in a deep square baking dish (which holds about 4 portions)
Layer the tin of baked beans over the corn beef
Layer the mash potato and then a layer of cheese on top of the potato (cheese optional for a less fat option)
Bake in the oven until golden brown around 30/40 mins
Serve with green beans or broccoli
